Employee Spotlight: Registered Dietician Rebecca Moore

Moore received an undergraduate degree from Southern Utah University where she majored in nutrition and minored in chemistry. She received a master’s degree in Dietetics with sport emphasis from the University of Utah. She also completed a yearlong fellowship from the University of Kansas.

Moore works with the Gymnastics, Beach Volleyball, Track and Field and Men’s and Women’s Golf teams. She says her best memory is getting to travel with the Beach Volleyball team to Gulf Shores every year for the NCAA Nationals. “There is nothing better than waking up to the sound of the ocean and implementing nutritional practices,” says Moore. “I cook for the team for the team while they compete in their tournament.”

She says her favorite part of the job is getting a resistant athlete to buy into working on their nutrition and then seeing big results in how they feel in perform. “We have a top-notch team of performance dietitians here and I enjoy working with them,” she says. “This group truly embodies teamwork and makes sure that our athletes are taken care of every single day.”

Her biggest challenge, she says, is working with so many different personalities and nutritional needs among the five teams she works with. Although challenging at times, Moore says she is inspired by seeing athletes work incredibly hard and be disciplined in all areas in order to be successful.

Her favorite travel location is either going home to Iowa or to Utah to hike and visit with friends. Moore also plays the violin and piano.
